Ingredients

Main Ingredients
  • 1 can cannellini beans, drained and rinsed
  • 2 large onions, thinly sliced Slice thinly for even caramelization
  • 2 tablespoons olive oil Can substitute with butter for a richer taste
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • 2 tablespoons balsamic vinegar Adjust based on taste preferences

Method

Preparation and Cooking
  1. In a large skillet, heat olive oil over medium heat.
  2. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until caramelized and golden brown, about 20-25 minutes.
  3. Add the minced garlic and thyme to the skillet; cook for about 1 minute until fragrant.
  4. Stir in the cannellini beans and gently toss to combine. Cook for 5-7 minutes until the beans are heated through.
  5. Add balsamic vinegar, and stir to coat the beans. Season with salt and pepper to taste.
  6. Serve warm as a side dish or over toast.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in a skillet or microwave before serving. For a spicier dish, add red pepper flakes while cooking the onions or stirring in chopped jalapeƱos with the garlic.
