Ingredients

Main ingredients
  • 3 pieces ripe bananas Use very ripe bananas for best flavor
  • 1/2 cup sour cream
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour Can substitute half with whole wheat flour for a healthier option
  • 1/2 cup chopped walnuts (optional) Can be replaced with other nuts or chocolate chips

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add the sour cream, softened butter, sugar, eggs, and vanilla extract to the mashed bananas. Mix until well combined.
  4. In a separate bowl, whisk together the baking soda, salt, and flour. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.
  5. If using, fold in the chopped walnuts.
  6. Pour the batter into the prepared loaf pan.
Baking
  1. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

To keep your banana bread fresh, store it in an airtight container at room temperature. For longer storage, wrap tightly in plastic wrap and refrigerate for up to a week or freeze for up to three months. Avoid overmixing the batter for light and fluffy bread. Feel free to add spices like cinnamon or nutmeg for extra flavor.
